Today, on the menu is catfish pepper soup with white rice. Catfish pepper soup is one of the most popular type of pepper soup in Nigeria apart from the likes of cow leg pepper soup. This soup is a good idea especially in the evening when the weather is a bit chilly. Due to the fact that it is best served hot, it makes the body generate heat which in turn chase away cold. I have once shared that it was a regular in my diet when I just delivered my baby as it helps the body to heal fast.
In bars or lounge in Nigeria, Catfish pepper soup is often referred to as 'Point and Kill'. Wondering why it is referred to as pont and kill? Well, I'd explain to you in a simple parlance. Let's say you go to a lounge or bar to have some nice time and you need something to enjoy alongside your drinks, you will need to go to the kitchen or the designated area to select your desired catfish by pointing at the one you want. Consequently, the selected catfish will be killed in your presence while you go to your seat to wait for it to be cooked and served. In other words, you pointed and it was killed.
However, today I'm preparing an home-made catfish pepper soup. The ingredients may vary depending on choice or availability of ingredients at the time of cooking. Some will prefer to use fresh scotch bonnet and red bell pepper instead of grounded dry pepper. Some people may also add ginger, garlic and the likes.
INGREDIENTS
Catfish
Pepper soup spices
Natural herbs
Grounded pepper
Scent leaf (sliced)
Onions
Seasoning cubes
Salt
Water
Step by Step
First and foremost, let us prep the ingredients we will use to make the pepper soup. We'd start with the catfish.
Cut the fish into your desired sizes. Wash the catfish thoroughly with salt and lime to remove the slimeness.
Add the catfish to the pot and mix your ingredients (pepper soup spice, natural herbs, grounded pepper, onions, seasoning cubes and salt) together.
Add some water to the pot on medium heat as you allow the catfish to cook until it is done.
When you are sure that the fish is done you can sprinkle your sliced scent leaves and allow to simmer for 1-2 minutes
You may avoid stirring the pot so that the fish won't scatter or break. You can gently shake the pot to mix all together.
Check the taste to be sure they are in the right proportion. If not adjust the required seasoning to add extra taste.
Your pepper soup is ready
Serve hot with your preferred accompaniment. In my case I used some white rice.
Catfish pepper soup is very easy to prepare. It doesn't require any serious cooking skills. You just need to ensure that you add the ingredients in the the right quantity. Apart from that it is highly medicinal. Most of the ingredients are herbs and you don't need oil to prepare a pot of delicious pepper soup.
